Rinse brains. Put it into hot water and boil it for about 3-5 min. Take it Out carefully onto the plate and dice it. Prepare bechamelsauce*. 1/3 of it mix carefully with brains. Put it into a bowl to roast it in an oven and the rest of sauce pour into it. Then strew some Tylżycki cheese. Sprinkle melted butter with breadcrumbs. Roast it in a hot oven for 20 minutes. After that decorate everything with slices of lemon and some parsley and leek. *Making bechamel sauce Melt butter with flour. Add some milk and sugar and then boil it. To season add some salt and pepper. Mix it with the yolks, cream and grated cheese. At last again boil everything.
